Several have asked…  what exactly is “racking”?

 

Anytime wine is moved from one vessel to another it is refered to as ”racking”.  Racking separates the wine from the lees, or sediment that has resulted from fermentation. It aides in continuing the fermentation process and prevents “off” flavors from occurring.
